MAYONNAISE AND CHUTNEY CHICKEN (VRA-NA-MEER-HOENDER) RECIPE
This Chicken Casserole recipe is a much loved favourite in South Africa. It will be a hit with family or friends who will invariably ask for more chicken, which is why it is known as "vra na meer hoender" which means 'Ask for more chicken' in Afrikaans.
Mayonnaise and Chutney Chicken (serves 4-6)
Ingredients
- 6 to 8 Willowton free range chicken thighs
- 1 onion, finely chopped
- 2 cloves of garlic, chopped
- 1 teaspoon Worcestershire sauce
- 3⁄4 to 1 cup Mrs Ball's chutney
- 1⁄2 cup Colway mayonnaise
- 1⁄4 cup water
- Salt and freshly ground black pepper
- Imperial Grain white rice
- Mixed salad to serve (optional)Method 
- Preheat oven to 160°C.
- Season the chicken with salt and pepper and place in ovenproof casserole dish.
- Sauté onions gently on low heat, for 10 to 15 minutes until the onions are soft and have a golden colour.
- Add 1⁄4 cup water, chopped garlic and Worcestershire sauce to the onions.
- Mix in onion mix with chutney and mayonnaise and pour sauce over chicken.
- Cover casserole dish and bake in oven at 160°C for 1 1⁄2 hours.
- Serve with rice and fresh, mixed salad.
