Prawn and Black Truffle Pasta Recipe

Ingredients
- 2 tbsp Bovalina Australian extra virgin olive oil
- 1 red onion, finely diced
- 250g fresh Australian tiger prawns
- 1 cup dried mushrooms, sliced
- 1 tsp Stonemill paprika
- ¼ cup Little Birdwood white wine
- ¼ cup Farmdale thickened cream
- 2 Casa Barelli burgundy truffles, finely shaved
- 2 cups San Remo egg pasta tagliatelle nests, cooked to al dente
- 1 cup fresh rocket
- Salt and pepper, to season
- Extra rocket leaves, to garnishMethod 
- In a large pan, heat olive oil then add the red onion and fry until caramelised. Add in the prawns and sliced mushrooms.
- Fry, stirring occasionally, for a few minutes until the mushrooms have softened and the prawns have just started to turn orange.
- Stir through the paprika before adding the wine. Cook for 1 minute, then pour in the cream and truffles.
- Stir through the pasta and rocket and season with salt and pepper, before serving.
