Ingredients

- 1 pack Has No gluten free buckwheat pasta spirals
- 1 jar Remano pasta sauce
- 2 tablespoons olive oil
- 1 onion, diced
- 1 clove garlic, minced
- 1 small eggplant (unpeeled), cut into cubes
- ¼ cup ricotta cheese
- 1 handful fresh basil leaves
- Salt and pepper to taste
- Add Chilli to tasteMethod

- Cut the eggplant into cubes and lightly salt. Set aside to draw out excess water.
- Add the oil to a frying pan and sauté the onion and garlic on a low heat.
- Add the eggplant and sauté lightly. Remove eggplant from the pan and set aside. Add the jar of sauce to the pan and stir through the ricotta. Once combined, return eggplant to the pan tossing until heated through.
- Meanwhile, cook the pasta in salted boiling water and when cooked, toss the pasta with the sauce.
- Sprinkle with basil leaves and season with salt and pepper.
- Serve immediately.
