Preparation time: 30 minutes plus 30 minutes resting
Serves: 2-4
Ingredients
- 300g Molini Pizzuti fine Italian "00" flour
- 3 Lodge Farms free range eggs
- 1 tablespoon The Olive Tree extra virgin olive oilMethod
- Pile flour into the centre of a large board and make a well. Add the eggs and oil, and using a fork, beat lightly together.
- Gradually mix in the flour, a little from the centre, and then incorporating the flour from the outer edges of the pile, maintaining the well.
- Once the dough has come together, sprinkle a little more flour on the board and knead the dough for 6 minutes or until silky and elastic.
- Wrap dough in plastic and place in the fridge for 30 minutes to rest.
- Roll or shape pasta dough as desired.
- Bring a large pot of salted water to the boil. Carefully drop the pasta in, maintaining a rolling boil. Cook for 3 minutes or until al dente.
- Serve with your favourite pasta sauce and freshly grated parmesan cheese.
