Preserved Lemons Recipe

Preserved Lemons Recipe
Prep Time: 15 mins
Serves: 10 - 12 people
Ingredients:
- 5 medium lemons, scrubbed, top and tailed each lemon cut into 8 wedges
- ¼ cup sea salt
- 1 dried bay leaf
- 5 whole black peppercorns
- 1 star anise
- 1 cinnamon stick
- 1 cup lemon juice, freshly squeezedMethod:
- Place 1 tbsp salt on bottom of jar, add 4 lemon wedges. Repeat this layer again. Then add peppercorns, cinnamon stick, star anise and bay leaf. Repeat layering salt and lemons until jar is full and tightly packed. Top with lemon juice ensuring that lemons are fully covered. Seal jar.
- Allow the jar to sit at room temperature for 2 days before refrigerating for 3-4 weeks. Turn the jar upside down occasionally throughout the process.
- Use a sharp knife to remove the flesh and pith from the rind and discard. Slice or finely chop the rind and add to your favorite tagines or sauces.
