Tasting Note: Shepherds Purse, producers of artisan ewe and cows milk cheeses, has been an independent family business since the 1980s. The cheese is made by hand on the family farm in North Yorkshire. Launched in 1995, Yorkshire Blue is Shepherds Purse's first blue and first cow's milk cheese, and the traditional recipe gives the cheese a unique sweet and buttery flavour, without sharpness - and as the cheese ages, the flavour becomes more complex. Salty and creamy, it's a great cheese to pair with a glass of Clairette de Die Tradition, Rhône, NV.
