Tasting Note:The Sparkenhoe farm, home of cheese makers David and Jo Clarke, is located in Upton near Market Bosworth. This handmade Red Leicester is made in an authentic way using unpasteurised milk from the farm's own herd of pedigree Holstein-Friesian cows, and matured in cloth for a minimum of 6 months, giving it a rich, full flavour. A mellow, sweet and nutty farmhouse cheese with a citrus finish and authentic russet colouring, the smell of fresh Beachwood is soon replaced by a distinctive earthy, grassy and musty aroma. Pair with Séguret Rhône Villages, Rhône, 2018, for a delicious wine and cheese combination.
