For an average of 2.6kg in weight cook at 190°C (180°C fan oven) for 1 hour 40 minutes. Place in the centre of the oven, on a bed of carrots, onions, garlic and thyme for flavour (optional). When cooked, insert a skewer into the meat to see if the juices run clear. Remove from the oven and leave to rest.
